Ilka came home in 2021 with one conviction: the most honest kitchen instrument ever built is a fire, and Hamburg deserved a room built around one. She tore the gas line out of a former print shop on Schulterblatt, bricked a hearth where the presses stood, and capped the dining room at seventeen tables — close enough that every seat can see the flames work.
We cook over beech and oak, nothing else. The menu is whatever the market and the fire agree on. If a dish doesn't need smoke, it doesn't make the menu.
