Our story

Chef Ilka Brandt

Seven years running the pass at two-Michelin-star Sølvtrane, Copenhagen. Born three streets from here.

Ilka came home in 2021 with one conviction: the most honest kitchen instrument ever built is a fire, and Hamburg deserved a room built around one. She tore the gas line out of a former print shop on Schulterblatt, bricked a hearth where the presses stood, and capped the dining room at seventeen tables — close enough that every seat can see the flames work.

We cook over beech and oak, nothing else. The menu is whatever the market and the fire agree on. If a dish doesn't need smoke, it doesn't make the menu.

A twelve-seat chamber behind the hearth with its own fire, its own menu, and a door that closes. Birthdays, deal closings, the dinner where you finally introduce the families — it has hosted all three in one week.

Before you ask

Fair questions, straight answers.

Do you take walk-ins, or is booking the only way?

The six counter seats facing the hearth are never bookable — they're first come, first seated, every single night. Show up before 18:30 or after 21:30 and your odds are honestly good. The seventeen tables, though: book those.

I have an allergy. Is an open-fire kitchen a bad idea?

Tell us in the booking note or on the phone and the kitchen plans your plates before service starts — most dishes flex for nuts, dairy, gluten and shellfish with a day's notice. One honest caveat: it's a single open room with one fire, so we can't promise a trace-free environment for severe airborne allergies. We'd rather say that here than at your table.

I'm vegetarian. Is a fire restaurant going to be three sides and a salad?

Our celeriac steak spends three hours buried in the coals and regularly out-orders the Ibérico. Leeks, beetroot, the burnt cheesecake — about a third of the menu is vegetarian by design, not by garnish. Vegan? Call ahead and Ilka builds you a plate from that morning's market.

Can we bring the kids?

Until 20:00, absolutely — we have two high chairs, half portions of the bream, and a kitchen crew that thinks a six-year-old watching the fire is the best audience in the house. After 20:00 the room turns grown-up and loud, which is our gentle way of saying: book the early seating.

Is there a dress code?

None. This is the Schanze, not a yacht club. You'll go home smelling faintly of woodsmoke whatever you wear — consider that the souvenir.

Kitchen takes last orders at 22:00 Tue–Thu, 22:30 Fri & Sat, 21:30 Sun — the room stays open past that. Counter seats: walk-in only, all night.

  • Transit: U3 / S21 / S31 Sternschanze, 4 min on foot. Night bus 601 stops at Schulterblatt.
  • Driving: honestly, don't. If you must: Parkhaus Neuer Pferdemarkt, 6 minutes away, €2.50/h after 18:00.
  • Step-free: level entrance, accessible WC, and table 4 keeps a clear turning radius. Tell us when you book and it's yours.
